In the Jewish Passover dinner plate, parsley stars as a symbol of spring, renewal and freshness. That same refreshing quality was used also in ancient Greek and Rome, where they used to chew parsley at the end of the meal to freshen up their mouths and neutralize strong odors. The Greeks would place wreaths on the heads of contest winners, in which parsley was always a part of. Parsley is considered a defender from evil and that is the origin of the custom of using it as garnish on plates.

In the past they used to put parsley on food plates to protect food from contamination and its leaves were put into baths to purify and get rid of bad luck. Parsley purifies the body as well – helps the lungs, liver, thyroid gland and the urinary tract.
